Ingredients
- 1 cup chickpea flour
- 1 cup water
- 1 tablespoon nutritional yeast
- ¼ teaspoon turmeric
- ¼ teaspoon black salt kala namak or regular salt,
- freshly ground black pepper
- coconut oil or olive oil.
Instructions
- In a small bowl, whisk together all ingredients except oil.
- Set aside for a few minutes.
- Warm a large nonstick saute pan over medium-high heat.
- Lightly grease the surface with oil.
- Pour half of the batter into the saute pan.
- Cook for about 5 minutes on the first side, then the other.
- Repeat this process one more time (you’ll have two omelets when you’re done).
- Enjoy immediately on its own or with a side of your choice.
- Hot sauce, salsa, guacamole, sliced tomatoes, or a lightly dressed salad pair nicely with this dish.
Notes
PREP TIP: If you’re using a small pan, you may need to do upward of 4 batches of this recipe.
