Ingredients
- 1 cup steel-cut oats
- 2 cups vegetable broth
- 1 tablespoon olive oil or coconut oil
- 1 onion chopped,
- 2 garlic cloves minced, salt,
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary freshly ground black pepper.
Instructions
- In a small saucepan, bring the oats and the vegetable broth to a boil.
- Then reduce to a simmer, stirring regularly.
- Cook for about 20 minutes or until the steel-cut oats are nice and thick.
- Meanwhile, warm the oil in a small saute pan over medium heat.
- Add the onion, garlic, and a big pinch of salt, reduce the heat to low, and cook until the onions begin to caramelize, 15-20 minutes.
- Add the onion mixture to the steel-cut oats and mix it all together.
- Give it a taste and season with salt and pepper, if desired.
Notes
NUTRITION TIP: Feel free to bulk up the oatmeal with the addition of some avocado slices and chopped cherry tomatoes. They’ll add extra fiber and flavor!
