South Indian Spinach gravy

My husband follows Hebbar Kitchen for this Spinach kootu recipe.

It is our weekend favorite with sambar and rasam. I like to roast and grind ingredients once and use twice or more. I have not tried other dals, but green or yellow mung are good alternates.
